Walleye are approaching boring to catch. Very poor fighter pound for pound. But they are great to eat! Lake trout are worse fighters and usually much worse eating. Outside of trash fish, Lake Superior lakers are the worst eating fish I have put between my gums. My favorite fish to catch is fresh sockeye salmon 7 to 11 pounds on fly rod. They are pound for pound the hardest fighting fish I have yet hooked into. You'll get everything: tarpon walk, fantastic runs, and jump after jump. They are built for power and for jumping (waterfalls)! No comparison to rainbow trout which are probably pound for pound the feistiest trout (although technically they are now classified as salmon not trout, while Atlantic salmon is actually a trout and not a salmon). And you'll not get a better eating fish than fresh sockeye. Nothing tops that!!
I'm with Bee - I'm just happy to catch something! lol... That said, Rainbow Trout and Smallmouth Bass are probably my favorite freshwater fish, while Striped bass are my favorite saltwaters - followed closely by Blues! I havent don't much in the way of saltwater fishing though
