how do you cook a fish on an open fire without a pan or skillet?

You can wrap it in foil with a little butter, lemon and seasoning. Place on hot coals. Buy a folding wire basket, or make one out of green split wood. Then there is always Sushi.

Foil or bark will work - I prefer foil. Bark won't hold butter and wine and other tastey things. You can also build a grate or basket out of small branches.

I like to wrap it in foil and just throw in a cut up lemon and a cut up habenero pepper. Be sure to place coals on top. And careful not to puncture it.

As a young kid, I caught some crappie with another young friend and we just built a fire on the river bank, stuck a green stick in the mouth and out the gills then roasted them hot dog style over the fire, scales and all. It just may have been that we had been fishing all day and were real hungry, but as I remember, they were very good that day. I can not remember all the details of my many fishing trips over the years, but that is one that still sticks out.

I've never tried this, but I've read that you can wrap one in wet clay and bake it. When the clay is dried and cracked away, it pulls off the scales.

You can split the fish and fasten it to a plank or split log, flesh side out and stand it up and cook the fish by reflected heat.

I just cook a trout on a forked stick like a hot dog. Just use care as the fish can fall apart when cooked through if turned too quickly.

I have wrapped a trout in clay cut some vents and put in some seasonings/ lemon and baked them in my oven. it was pretty good. i vote something simpler when out in the woods.

DO NOT eat fresh fish sushi. Freeze and then thaw it. If you make up fresh fish sushi in the bush you are running a very high risk of picking up some very nasty parasites. Lots of em!
