Same as Jay but pan fried in just a little peanut oil. I just scale, gut, head, and wash then fry them whole. When fried right, the crispy tail is the fist thing I eat.
Fillet em', batter em' and fry em'. Jay is on the right track with your batter. Dip them in some buttermilk or milk/egg wash first to help the batter really stick. Don't be afraid to add spices to your batter, lots of spices. I'm a fillet man myself, but to each his own. Cold beer is a required side dish:)

I'd feel right at home eating with Jay or Santa. The way I grew up eating them was the way Santa described.
