They are fun to catch, but as you oberved, they do have teeth and will bite you if you are careless with them. They are also called cypress bass. My biggest was thirteen pounds and I caught him on a plastic worm of some sort a lot of years ago.

I have caught bowfin all my life here in Alabama. We even have a tournament for them. I have learned that when you first catch them, cut off the tail just behind the point where the excerment is discharged and put the tail on ice fast. All fish start to spoil as soon as they are taken from the water and grinnel are one of the fastest and worst. Clean the tails cutting off the dark vein meat and soak overnight in beer. Next day dry off and salt heavy and coat lightly with ground red pepper. let the meat sit for at least a hour with the salt on it and then mix up buttermilk and hot sause, dredge and coat with seasoned flour then fry. For twenty years I threw them away before a cajun friend showed me that they are good to eat if handled right.
