I don't know what you are calling stone crabs, but around here there is a season on them and they are highly prized for their claw meat. Don't think I'd use one for bait even if I could. Never tried marsh crab.
Fiddler and sand fleas(little sand crabs) work good for sheepshead. What I call a stone crab is illegal to harvest. You can only break off one claw and throw the crab back to grow a new one. Big Red fish love to eat 1" to 2" blue crabs, but in my area it is illegal to have a blue crab that is less than 4 1/2" so they can not be used for bait. I know that the reds like the crabs because the last two big ones I cleaned had the small blue crabs in them. When I clean fish, I always check to see just what they had been feeding on. That is a good way to learn the feeding habbits of the fish and know what to use to catch them.
