what kind of jigs have the best success while fishing on a headboat in spring Florida waters?

Not sure what a headboat is and what difference the launch platform makes but in Florida waters, my prime jigs have been white jigs that I can cast way out there. About 1/2 ounce to 2 ounce depending on depth and conditions. The second go to color is yellow/green for offshore dolphin.

I love Shimmano's butterfly jig! I have cuaght fish while jigging as well as trolling with this rig. The colors listed above have produced results, NC fishing is getting hot!
