I have never had anything Orvis, but own a fair amount of Simms gear. I have found it to be excellent. As above, I doubt there is any real difference between the two in terms of quality. It's just a matter of which features you prefer, you'll be happy with either one.
I have never fished anything Simms. I do have a couple lower-end Orvis rods and reels and have fished some of their top of the line gear. All good stuff.
I got the SIMMS G4 jacket instead of the Orvis version because the former is made of goretex and it had way more features for $100 more than the Orvis. I posed the same question on a fly fishing forum about Orvis vs Simms waders. 95% voted for the Simms. I own some other Orvis products and they are doing well. Although I've had to return a few as they were shoddy in construction (shotgun case).
I've never owned any fishing gear(waders, boots or vests) outside of Orvis. The thing that keeps me coming back for their waders is the warranty. I just got the Sonic Seam waders discounted after 7 years of use my other Orvis waders got a leak. I called their customer service department and recieved my new pair, discounted by 45%, within a week. Not sure what the Simms warranty is like but I was actually considering trying out one of their vests. Just can't give up on Orvis.

orvis flies are top notch and I try to only buy from them, plus they have a select collection of popular flies for a $1.50 as a regular price.
