Q:
What size fillet knife is a good all around choice for freshwater? I'm looking for something big enough to work for fish out of the river but not too unwieldy for smaller trout

6"or 8" blade should be fine. Russell Knives makes THE sharpest fillet knives on the planet.

I am also a huge fan of the Rapala 7" It stays very sharp and glides through panfish and trout. It also cleans a nice walleye or smallmouth bass. Happy fishing!

Try a 7 inch Renegade, they work good and are cheap so that you don't have a cow if on falls over the side of yer' boat.
