Q:
How do you remove fletchings? (I'm trying to remove them so I can put on the quickfletch fletchings)

I use a dull knife. Cut off old fletching and don't dig into arrow shaft. Clean with alcohol to remove all oils/dirt.

As Pa said, be carefull not to damage the arrow while scraping the fletching off. A dull knife, a hooked utility knife, exacto knife or a veggie peeler will work.

Good answer from above and + 1 to both of you...Never use acetone or any other harsh chemical on carbon as it will compromise the fibers. Denatured alcohol is the best thing I've found to prepare the shafts and vane bases for refletching!!!

I actually use a very sharp curved blade made specifically for the job. I have found the sharper the tool the less damage I do to the arrow shafts.
