The old lever action Savage 99 in 308 "takedown" model was a dandy. If you can find one you'll probably pay some bucks for it. I am presuming you mean a rifle that can be broken down, not one that simply has "knockdown" power. Actually, I could never understand the utility of hunting with "takedown" rifles (perhaps some use if you're an assassin or hit man). Don't know too many guys who hunt big game in subcompact vehicles. Also, many takedown rifles were notorious for losing accuracy when reassembled. Perhaps that's why their popularity has fallen off.

Remington .30/06 Springfield.
The Browning BLR takedown is a great gun available in all the great big game cartridges.
Remington 700 series bolt action. Great gun in lots of calibers for around 350. Would go with a 270 or bigger cal depending on what you gonna hunt!
Any 30-06 or .308 will get the job done.
Remington 700 in 30/06 BIGGER if your after Dangerous or Large game, especially if they have fangs and claws.

Remington 700 30-06 would do good for you. If you are looking for good takedown, don't go cheap on shells either.
Sauer 202 take down is very nice but $$$. Otherwise, a break action like a T/C Encore. Some old Savage 99s were also take downs.

Ruger makes a good .30-06 bolt actions that will not break the bank at all.
My vote goes towards a 30-06 it does anything you need it too. I shoot a savage and it is very accurate.
You hear goos thing about the Savage combo deals if you replace the scope that comes with them.
I have a Tikka T3 270 and it is great. More money but in my opinion worth it.

The T/C Encore will go right up to the minimal big game cartridges. Go for the Beeler for more power.
