Q:
I have been thinkin of going down South Hog hunting. Since I do not kill anything I don't eat I would like an honest answer on what a feral pig would taste like maybe pork and what? I am no stranger to wild game.

I took a nice Florida hog a few years ago that made the best sausage I've ever eaten. The local butcher who processed it charged extra for "special seasoning," and it was well worth it, whatever he put into it. Highly addictive stuff.

Feral pig taste almost identical to domestic and you won't notice a difference unless you have them side by side. I find the domestic pork tastes just a little sweeter. Perhaps this is because of the heavy acorn diet of the feral ones I shoot. Also, there is less fat on the wild ones.

I love wild hog!!!!!! The ones we have been getting local have been eating too good and are over fat. The fact that they are free range still gives them better muscle tone. The young bores do not get a strong smell to the meat until they start breeding and the older bore hogs do not let them breed. We end up skinning most of them because we kill a lot in hot weather and the only way to get them cooded dowm quick is to skin them out fast and in coolers. Big wild bores still make good sausage. From whole smoked hog to fresh neck bones and cabbage, wild hog is hard to beat.

I had a feeling PigHunter would have an answer to this one, and I did not expect to hear him say they taste just like chicken.

The wild hogs I've killed in Texas are awesome to eat! Put some rub on there and throw 'em in the smoker for some really good pulled pork.

A friend of mine cured his own feral pig ham with sea salt. It was some of the best wild game I have ever had.

Carl, I forgot to say and you probably know this already; Never undercook wild pigs. Their nasty animals and can carry all sorts of nasties in their meat.

The one that I killed in Alabama was better than any tame pork that I had ever eaten and the one I killed was a boar. The pork chops were out of this world and the rest was likewise. Go for it.

It not only tastes like pork; it IS pork. They are great as long as they are not too big. If you get a big old bore over 300 or 400 pounds, I recommend boiling it with sawdust and eating the saw dust though.

Someone recently asked me if I had ever eaten pork stew. I said I had never even heard of it. Lamb stew, veal stew and beef stew, yes, but no pork stew. I'm wondering whether there isn't some reason why not.

Dakota,
LMFAO

I like to shoot the smaller young female ones to eat. Like Dakota said some of the big male ones are funky, and not in a good James Brown-funky dancin' kind of way.....

We host a wild game supper every December (I can't wait!) and wild hog is always on the menu. Use some of this

http://www.buttrub.com/about.html

and go low and slow with whatever cut of meat you want on the smoker, and it will make you want to slap your mama....almost.

I'm glad you asked this question because I have a chance to hunt wild hogs and I'm gonna give it a shot. Sounds like the meat can be very god.

DakotaMan, The big bore hogs down in my area can be tough, but they make excellent smoked sausage. No one ever notices the bore smell after smoking. I smoke with pecan wood becuse it is plentiful. I also make smoked bacon, smoked hamhocks, smoked ears, and smoked snots from them. I make my headcheese, pickled pig feet, salt fatback, cracklins, and other innards from sows. The scalding and scraping of the hogs to keep the skin only happens in cold weather here and is a lot of work.

A friend of mine bought a smoker called The Big Green Egg(I know it sounds wierd) it is only the best smoker on the planet! put ANYTHING in it and it gives it the tastiest smokiest taste in the world! Pork is no eseption. It is water proof an it floats, so that when you start drooling, it doesn't break, and you can find it on the celing!

I once knew somone who said he was fond of boiled pig's head and cabbage. It seems he had acquired a taste for that during the Great Depression. I hope I never get that hungry!

A feral pig will taste as good as a domestic hog if it has access to corn and other crops. The taste of the pig will depend on what it has available to eat.
