Anyone have a decent recipe for duck sausage? My wife doesn't enjoy the taste of duck and I need to be creative with cooking it so I can continue to hunt them.

I'm hunting for one too. I had fifty pounds of goose salami made before I went to Montana for pheasants back in October. It was okay but not great. I bought my best friend a grinder/sausage stuffer for Christmas (he already had the smoker). We're trying to find a recipe. I like summer sausage better than thuringer. We'll find something and give it a try during the next couple of weeks ... if he doesn't get shipped north to the mining boom. I'll keep you posted.

add some garlic, fennel seed, basil and flake red pepper to the duck, maybe some pork fat, and give it a try. Add provolone cheese if you like. probably some egg and breadcrumbs?
