Q:
I am going to try to train a bird dog for the first time. It will be mostly for quail, but also a little dove retrieving and deer tracking. Would a english pointer or german short hair be better?

My Registered GSH Jill is my best bird dog ever. At nine months old we planted 20 pen raised quail and turned jill and a 5 year old male GSH out to hunt. Jill pointed and retrieved 14 to his 6. You can see Jill and her pups by clicking my username and checking the photos. Have no experience with English Pointers, but have seen lots of good GSH's. The sire was Snowbarger's Buddy.

I do not know a lot about deer tracking with a dog but I have a golden retriever that I trained to hunt all upland and waterfowl and he does amazing. The reason I think that this would be a good dog for deer tracking too is that a Golden retriever gets it nose from a blood hound which should be perfect for tracking deer.
