I think quails and sparrows marinated in lemon juice, olive oil, garlic powder, salt and pepper for minimum 2 days in refrigerator tastes great.

I like deep fried Wild Turkey and deep fried corn on the Cobb, bobwhite Quail with Country Bacon over the brest on a BBQ, But the best of all the Ruffed Grouse
Oven Baked with Bacon over the brest,and some Red wine! I miss hunting them up in the North East.

Treestand nailed it as far as I'm concerned. The Ruffed Grouse is the best eating bird on the planet. The breast of these birds sliced thin and cooked with eggs for breakfast is out of this world. Another great way to cook them is to pluck them and roast in a deep dish.

Never had grouse and bobwhites are scarce around here, but I dearly love wild turkey, baked, smoked or fried. Let's not forget bacon wrapped dove on the grill.

I will say that grilled squab (aka: pigeon) breast is awfully hard to beat. Tastes a lot like organ meat but it tastes pretty damn good to me.
