The best for most guns is #6 high density shot. But you need to try different sizes to see which one patterns best with your gun. With HD the shot is so dense you can go to smaller size and get more pellets. A #6 HD pellet will kill like a #4 lead pellet and pattern better than lead to boot. They are very expensive but you only need a few to last the whole season.
You are talking banty eggs and hen eggs. Pattern your gun and see if it likes the 4s, 5s or 6s the best, that is which it throws the densest pattern with. Any of them will kill a turkey if you do your part.
I use 5s. I suggest you get one of those turkey head targets and take a shot at it. You want a good pattern that hits the head/neck with as many pellets as possible. As you get lighter than 6s, the pellets are too light to penetrate and as you get larger than 4s your pattern is not dense enough to hit the head well.
My Stoeger personally patterns best with 5s but my dads Mossberg patterns better with 4s. It all depends on your gun, what type of choke you are using, and what shell you buy. I found that winchesters pattern better out of my gun than the remingtons do.
It depends on which load your shotgun will pattern well. You want 10 - 15 pellets minimum in the head neck at 40 yards. My guns seem to prefer 5's over 4's

My BPS does well with #4's
Pay close attention to what Del said. He knows what he's talking about.
5. No need to ever go smaller with any kind of shot. 4s are for the goons trying to make turkey hunting as much of a long range affair as possible.
By smaller I mean larger. Smaller number larger shot. Dyslexia anyone?

I have used Federal #5's for years. Seems like I'll never use those two boxes up one shot at a time!
