An old Remington 760 rebarreled in .35 Whelen. It just plain shoots. 225 gr .358" diameter bullets hit hard and leave a big hole without damaging much meat.
My Go To Gun depends where I am about to "go to". Generally it would be either a 300 Win Mag or a 416 Rigby. As I get older my 06 seems to appear more often
The 300 Win Mag is on a customized Remington action, McMillan stock and a Shilen barrel (the third barrel). The Rigby is ancient by Griffin and Howe on a Mauser action, no idea what barrel. The 06 is on a Mauser action also.
Unless the hunt or the terrain dictates otherwise, I seem to reach for a Winchester Model 70 Lightweight Carbine in .250 Savage. It is one the most versatile and accurate rifles I own. Many others have been bought and sold, but this (among a few others) remains, and it is one of my favorites.
Remington model 7 chambered in .260 Remington. I carry my Savage Model 219 chambered .30-30 more often, but for some reason, every time I take the .260 out I come home with a deer...heck for the price of the ammo (about $2.00/round), it better be lucky! My version of sighting it in is taking 1 shot at a sporting clay at 100 yards. If the clay explodes, it's good enough because target practice with that gun is too expensive otherwise!
M98 Mauser in .300 Dakota (first 40,000 rounds + were in 25-06) and that is what made it my "go to" but I just like the rifle so much that even with the .30 caliber barrel it is still my go to gun. For serious hunting I still go to my 25-06 which is now in a Weatherby Ultralight so it is easier to carry in the rough woods.
However, my 5 foot nothing, 108 pound farm-wife daughter has absconded with my Ruger Mini-14 in .223 as her "go-to" gun for everything from coyotes in the garden to deer.

MLH, I wish I could see that 760. I'm anxiously awaiting a Ruger 77 that was rebarreled from .270 to .338-06, can't wait, can't wait.

I have that same 32 thats a great brush gun without a scope while making drives! When im sitting I have my remington Model 700 .270
i use my remmington mohawk model 600 in .243 for deer and tuasus pt 145 .45apc for personal protection

.308 Winchester made by savage fire arms. I use a 160 grain Hornandy and sierra bullet with a 3x9 Sightron scope.
I'm with 007, I have an elderly Rem 788 in .308 with a Bushnell 3X9 scope. No customizing, though. 165 Gr. handloads.
