I carry a Buck folder in the field and keep a Cold Steel Master Hunter close at hand in the Jeep. The Buck fixed blade with the gut hook stays at the cleaning shed.
My hunting knife is older than me by quite a few years. It was given to me by a man who was many years my senior. He worn the knife throughout most of his life and I've had it now for 39 years. It was hand made in Germany of high carbon steel with a leather handle. The blade is getting slightly worn now and the steel is no longer shiny. It holds a wonderful edge and God willing will one day belong to my son. Lesson here is- always buy the very best that you can afford and take good care of it and it will probably serve you very well.

He did do the leatherwork for the sheeth though, which could use a little care now that I think about it.

Kershaw is a good blade, it is durable. I would stay away from Gerber at all costs! Otherwise get a cutco hunting knife with a dura-edge blade.

Whenever I head out to the field I always carry my Shrade folder (skining knife), Ka-Bar (guting knife), and a Leatherman (mostly for the tools).
I have a schrade folding knife and a Buck 119 the buck is for the bigger part of cutting the animal up and the schrade is for the smaller details
