I've got some fresh Black tail, anyone have a must try recipe out there that I should try before I turn it all into burger and chunks?

Please don't turn the tenderloin or backstraps into chunks or burger. Grill them to med-rare to med at the most. Better than steak.

Oh, I wasn't going to grind the tenderloin or backstraps. I was referring to the hindquarter roasts.
