If i shot a squirrel in the body with a pellet gun that shoots 500fps would it run away injured or run and eventually drop

More than likely you will never find that squirrel.

Head shots if you can on squirrel. Body shots give squirrels time to hide in the Y of a tree branch or other hidey holes.

I think it would probably drop it but I would go for a head shot.

Pretty low velocity for a pellet intended for squirrel. Shoot for the head a body shot at that velocity will most probably result in a wounded squirrel.

Save your pettets for practice on paper targets until you get a .22 rimfire. Give the poor things a break.

Depending on where in the body you shot the squirrel and what type of squirrel (red grey fox)I would use a higher fps and pointed tip pellets. Good luck and bring some of your friends to the woods with you.
