I ate squirrels as a little kid when ever I killed them I cleaned them and cooked them myself. Not to many people in my family hunt so I guess I picked it up on my own.
I have not eaten them in years. My old friend Charlie, who died last summer at 93, loved squirrel and dumplings. Once I was visiting him when his nephew walked out of the woods with about 6-8 grey squirrels in a bag and handed them to Charlie as a gift. Charlie looked in the bag and handed them back to Eddie saying "They are all head shot, you ruined the best part".
Almost forgot - Pumpkin Eaters Stew. Squirrels chew on every jack-o-lantern around here on Halloween. Decided to try some squirrel stew baked in a small pumpkin - excellent! I named it after the little devils themselves.

My wife cooks them off in the pressure cooker until the meat falls of the bones, then takes the broth and meat and makes a delicious white gravy. Add some home made biscuits and fried potatos and that's all anybody should need. As an aside, my kids and I hunt them with either a .22 rifle or T/C Contender in .22 magnum or .410, no big shotguns, too much shot in the meat. Bon appetite! (spelling???)

To those who parboil before frying, what does that do for the meat? We have always breaded and fried them exactly like chicken. I'm open to new things, so I'll give it a whirl. Is it more moist that way? Smaller ones can get dry before they are golden brown. We sometimes soak them in milk or buttermilk for a while.
Does anybody know anything about soaking them in salt water for 24 hours before cooking them. I heard from an older gentleman that it makes them taste much better because it pulls the blood from the meat or something like that??

I love to eat Squirrel, I will make it into Pot pies, put it in some gravy and pour it on mashed potatos. Another thing that I like to do is pull the squirrel like pulled chicken or pork then cook it in some wild rice and cut up some sweet sausage it is amasing!!!!

boil squirrels till meat falls from bone
put meat in frying pan and light season to taste
( I use a dash of tonys and garlic powder)
get pot of chicken broth with veggies and add meat to it.
make several raw bisquick dumplings and set on top of soupstock.
place in oven about 250 - 300 Degrees till biskets turn brown. then serve.
You bet I eat Squirrel, I season them with BBQ seasoning then broil them for about six minutes on each side. I then place in a baking dish covered in cream of chicken gravy with crushed red peppers and cook in the oven for about 45 minutes. Serve with mashed potatoes and a veggie!
I quarter them and add a can of cream of mushroom or celery soup in a crockpot, cook on low all day. When done I put the squirrel over white rice or small egg noodles.

Yes I eat squirrel too it is so good and I loved it the first time I tried it. Me an dmy friend go squirrel huntin all the time during the season. Then when its time for the barbeque they cook it and put it in some rice.
I love squirrel. The young one I fry seasoned with salt, pepper,little garlic powder roll in flour. the old ones I like to do as above then put in flat pan cover with mushroom soup add onion, bell pepper, carrot and (potatoes when about half done). Bake in oven until squirrel is tender. We only have fox squirrels here and the old ones can get tough.
Yes, if I shoot it we eat it. I simmer in water until meat falls off bone and then make Brunswick Stew or cacciatore. Fed Ex guy told me they are great prepared like buffalo wings, haven't tried that yet.

My whole faimly loves squirrel. We put them into a crockpot with mushroom soup and cut up some onions in it and cook until it falls off the bone. Very good.
Yes, I eat squirrel. The legs and back are tasty if fried crispy. My Uncle Ken bakes the whole squirrel and even eats the brain.

I ate so many of them during my younger years just got tired of Squirrel and don't eat them anymore. Same way about rabbits. Give me some Quail.
