I don't know about Missouri, but Virginia Tech offers many undergrad programs in outdoor related programs including wildlife sciences. It is also located in Blacksburg, VA. close to national forest land for hunting.
I am going to Penn College of Technology, branch of Penn State :) , like steve said, great deer, bear and turkey, great trout. Our archery team is like the best in the nation as well.
Mizzou's conservation program is pretty good, they've got a wide range of classes offered that are geared towards wildlife conservation and forestry. Give that a look ... If your already in Missouri, it'd be nice to pay in state tuition as well. Trust me. Been there, done that.
Fayetteville, Arkansas (or a town right next to it) was listed by Field & Stream as the best city in the U.S. for sportsmen. The University of Arkansas-Fayetteville is located there. I am not sure what there undergrad program is like, but I imagine there would be a lot of courses to interest you.

I plan on going to Arkansas Tech in Russellville which offers Fisheries and Wildlife Biology for Bachelors and Masters. I have done research and the only schools in Arkansas that offer any Wildlife related degree is Arkansas Tech and Arkansas State in Jonesboro.

Paul Smith's College - way up in the Adirondacks. Very outdoors oriented college, more so than any other I can think of.
Montana State is very much worth a look too. Very wildlife/bio oriented, and right in the wild, just north of YNP.
Basically this place is fantasy land.
Gallatin, Beartooth, Absaroka - legendary mountains.
Mountain goats, sheep, elk, pronghorns, muleys, moose, wolves, grizzly, wolverines, you name it all running around not far away.
