I just make them into jerky. But if you really wanted to make a meal out of it you can butterfly the breast and fill it with cream cheese and jalapanos. Then wrap it in bacon and grill it. I call them goose poppers.
Slice them (across the grain) into sections about a half-inch thick. Coat with a little oil and season with salt, pepper and anything else you like. Sear each side quickly on a HOT grill, leaving them rare in the center. Turns out tasty in my experience.
What Drover1 said. Or, grill them so rare you are afraid to eat them, add salt and lots of ground pepper.
Thank you for the comments.
Like drover said, only marinate the steaks in Dale's Marinade overnight if possible, 3-4 hours will work though. off. Only a little is required as the Dales has some salt already. A little Montreal Steak seasoning tops it off. Only a little is required as the Dales has some salt already. Medium to medium rare is the key.
Like everyone else said, just don't overcook them.
