Q:
Any tips or advice on how to make homemade jerky. I was thinkin of just puttin some strips of meat in the oven(not on a pan, on the racks)at a low temp and lettin them dry.

set your oven as low as it will go, place the meat on the rack and let it bake/dry for about 6-8 hours. for flavor marinade in 1 bottle soy sauce, 1 bottle worcestershire sauce, 1 bottle liquid smoke, and 2 cups brown sugar. mix all together and marinade meat over night.

Get a dehydrator, marinade the same.

Ditto on the over recipe but I prop the door open to let the moisture escape. It cooks a little quicker then. I set the over at 200.

Experiment with a couple of flavors, make 1/2 batch with a little sugar marinade as stated above, then the 2nd half add a little garlic and very little red pepper leaving out the sugar.

If you use your oven I hope you have an understanding wife ... when walking in from outdoors the odor from certain recipes can be overpowering.

i use hi mountain jerkey mix from gander mountain and set my oven at 200 degrees and wait for three hours
