Scrambled with onions, aged cheddar and Tabasco. Hickory smoked bacon on the side, grits and biscuits. Homemade blackberry jelly or tupelo honey for the biscuits. Tall glass of cold milk.

i scramble them, toss ham and cheese into the scrambled eggs. the secret is use half & half instead of milk, makes them nice and fluffy. put that in between two pieces of buttered toast, and put a few strips of crispy bacon in there to make a delicious sandwich...homestyle potatoes on the side.

I eat eggs three ways:

1. Scrambled

2. Fried up hard and in a sandwich with mayo (although I'm going to have to try that onion next time Sarge)

3. In a scramble with peppers, onions, potatoes, and bacon and/or sausage

Pickled with beets to the point that the yoke has a nice red tint to it or fried over medium with bacon, grits or hashbrowns, biscuits, some good gravy, and a good cup of coffee. Bee, this reminds me, my son tried your hot sauce recipe, it's looking pretty good.

I love boiled! I must have one for deer season, its in the backpack and usually ate around 10am and then another around 2pm for protiens! My mom packed one in our packs when we hunted with grandpa! its was a sin to not have one! I can remeber eating the egg sitting next to my kill before I gutted it..."boy your gunna need some energy, eat your egg!"

I love eggs any which way! I'm rasing chickens now so we eat them every day, sometimes twice!

Saute asparagus/onions in butter 'til transluscent.
Make an omelet with that and some nice cheddar cheese. Big ol' Pillsbury "Grands" dripping butter with hot coffee and peach or pear preserves to finish that "last" biscuit with!!!

My mother, on the rare occasion, would make biscuits and "salt" bacon with gravy!! WOW!!!
Boil the bacon to remove "most" of the salt!
Flour and fry the bacon and make gravy with the drippings!!

Charles M. asked my grampa one morning in camp, "Beartrack, how do you like your eggs?"
Grampa smiled and replied, "I like my eggs real good!"(basically saying, "...you cook 'em, I'll eat 'em...")

Bubba-- Salt meat, catheads, and gravy. That is what breakfast must be like in heaven. Only thing I could add to make it better is to add free range duck eggs fried over easy in that freshly rendered pork fat drippins before making the gravy.

Hush yo' mouth! White(salt) meat and gravy on some catheads sounds pretty good about now. Top off that last cathead with some Golden Eagle Syrup and you are in bidness!

WAM, We always called it fat back when I was young. I salt down my own every year when I dress out a hog. I would have to admit that home pressed and cooked down cane syrup or fresh honeysuckle honey along with fresh churned Jersy butter would go good with the catheads. Also when I was young we had what was called yard eggs, but now to be politically correct we have to call them "free range".
