Tip of the Day: Prop Open Your Birds to Preserve Their Flavor

Gamebirds and waterfowl taste best if they are drawn immediately after being shot. After taking out the innards, use a handful of grass to remove excess fluid from the cavity, and prop the carcass open with a twig so that air can circulate. Your efforts will be rewarded when the birds are served at the table. -- Jerome B. Robinson
