Eating bluefish isn't a widespread practice, maybe because not enough east-coast anglers have heard of seen this recipe.
Q:I had to post this. I just saw a Blue Fin Tuna sell for $736,000. One of my earliest memories is of a gentleman who had a giant Tuna sticking out the back of his station wagon. This was in Montauk point in the mid 50's. I asked him what he was going to do with the fish. He replied they were selling it for cat food! How times have changed and how small the world has become.

Q:This is a question of how to put up fish in the freezer. In my experiance Speckled trout, white trout, weakfish do not freeze well. They seem to be mushy when you thaw them. Any advice to avoid this is appreciated. Im sure Santa has the answer but anyones comments are welcome.
