Start with a sheetrock/razor knife and score the flesh 1st behind the gills than across the backbone and down the belly to the tail only score the flesh do not cut deep.Than grasp the flesh behind the gills with pliers and pull towards the tail.Finally take your filet knife and peel the meat right off the bone.This can be done without having to gut the fish.

The reason for using the razor knife is two fold it cuts through the scales and skin without effort and also lets you keep you filet knife sharp for peeling off those huge filets.
