Boar Chili

This is a great chili recipe for wild boar that I got from a buddy of mine. It should serve about 6 people.

Ingredients:
-ground wild hog (2 lb)
-smoked sausage (1/2 lb)
-green chilies (10 oz. can)
-diced stewed tomatoes (14 oz. can)
-tomato sauce (2, 8 oz. cans)
-onion (1 chopped up)
-bell pepper (1/2 chopped up)
-minced garlic (1 tbs)
-green onion tops (1/2 chopped up)
-chili powder (2 1/2 tbs)
-Worcestershire sauce (about 1 oz.)
-parsley (1/4 chopped up)
-cajun seasoning mix (1/2 tbs)

Directions:
Stir the meat in a large pot until it starts to brown a bit. Then you can add all of the ingredients, but wait to put in the the green onion tops and parsley, and stir well. Simmer for about two hour or until the meat is tender. Towards the end of the two hours, taste the chili and add more cajun seasoning mix (and if its needed, add more chili powder). Let the chili sit on low heat for about 1/2 hour, then skim the top of it with a laddle to get rid of the grease. This is when you add the onion tops and parsely (to garnish the dish but it really isn't needed). Then you can serve it with sour cream, cheese, and hot sauce. Enjoy!
