Ingredients:
- 4 large Anaheim chile peppers
- 1/4 lb. venison stew meat, cut into even smaller pieces
- shredded sharp cheddar, about 1 cup
- kosher salt, to taste
- 2 chilled eggs, yolk and whites separated
- 3 green onions, the white/light green parts sliced in half lengthwise
- manteca (pork lard) or vegetable oil for frying
- fresh parsley, chopped
- your favorite salsa
