Goose Tacos

Always have been told that Goose is "no good" for table fare but my experience with it has been nothing but good.

I was told to cook it very much the same way you would a steak. I even fooled my less than woodsy girlfriend into believing she was eating a "steak fajita"

1. cut goose breast into thin strips (think fajita pieces)
2. chop cilantro, onion, peppers,etc (whatever you like in a taco)
3. add oil to pan and simmer a mixture of goose breast and whatever you decide to use for #2 i use cilantro, onion cooked in with the meat and add it to white rice later.
4. serve on a flour or corn tortilla.

I have actualy tried this, I didn't have such good results though, mine came out very tough, perhaps just an older bird, maybe and more likely i over cooked it. Best use for geese i have found is jerky.

well better luck next time. But you're not kidding about the jerky that has been my favorite snack here lately. (The girlfriend knowingly will eat that one too, she prefers it over my venison jerky)

does it matter much if its a snow or canada goose for this recipe, and also would it help to marinate the strips ahead of time?

Run goose breast through metal detector. When clean, run goose breast through meat grinder. Egg, fine dice onion, bread crumb, S&P, Italian mixed herbs = gooseburgers!

got one today and read the goose burgers, it's dinner after putting up xmass tree for sunday dinner!

Skip the tacos and eat breakfast! mix ground goose with some ground pork, sage, pepper, salt, pan fry and have with eggs!

the wife said "heck this would make good meatloaf" so we mixed in oats, egg, ground horseradish, chopped carrots (gotta get them veggies in), worchester and ketchup!
Cook in greased pan just as regualr meatloaf.

Should be good to have after we get the xmass tree today instead of the burgers as mentioned earlier.
