I do some Photoshop myself, and these look unretouched to me.
The fish doesn't appear to have a shadow because
1. it isn't wearing a billed cap
2. it isn't standing on the ground
3. it has a natural color transition designed by nature to disguise it when lit from its dorsal side, which is what is going on in the picture.
The "size distortion" is an inescapable consequence of shooting the subject at a close distance. The fish would appear smaller if the photographer would back off and shoot with a telephoto, but who would want to make a fish look SMALLER in a photo?
Oh, the "missing hands"? These were shot in direct sun, and the bright parts of the fish make hard edges.
The "photoshop" halo pointed out happens with digital cameras; I believe it is an effect of the photosensitive plate. The digital equipment makes edges look edgier where contrasts are sharp.

These extra pics prove the photos have not been altered. No one would have taken the time (and done such perfect jobs) of making 6 extra phony shots!!
