If any one knows about Citico Creek in East Tennessee, you know that large trout are hard to come by with water levels so low. So, when I hooked into this 18-inch pound and a half rainbow on a light cahill, I thought fish for dinner tonight! Some key lime olive oil, rosemary, kosher salt and ground peppercorns over an open fire was the perfect close to a full day of fly fishing on Citico Creek.
