    One of the finest presents my wife ever gave me long before we were married was a Luhr Jensen Big Chief wood smoker. I have a heroin-like addiction to smoked salmon and trout, lox, and the ever-so-delicious Scandanavian gravlax. Needless to say this was a fine gift, and for a while there I found it necessary to treat every fish I kept for the table to an applewood or hickory smoking. Bring a nice platter of smoked fish you caught to a party and folks are impressed. It's fun to look fancy.

I hope it works out for you! one general thing, my buddies and I have noticed that the single most important part of the whole process is the air drying step. screw that up and your end product isn't going to be up to snuff. I've taken to putting them in an unheated oven, on the rack, and putting a fan in the front to circulate air around them. works great! yrs- Evan!

    oh, I should also say that in a "dry brine" (which won't stay dry for long), it's helpful to stack the fish on top of one another in tupperware or something similar. I mention this because "wet brines" seem to call for putting the fish face down (skin up) in a flat dish. yrs- Evan!

    cermele - this might sound crazy (and it may have already been mentioned) but try leaving the water out of your brines. those fish have water in them and the salt in your recipe will draw out the liquid and make a natural brine. the resultant flavors are noticeably superior (in my opinion, of course). leave out the OJ, too, and just replace with orange zest. same with the lime. yrs- Evan!

  • Fly Fishing Without a Net

    Are you a net person or not? A lot of guides I know think using a net for landing fish is harmful to trout. It rubs off their slimy protective skin coating. Then again... what's worse for the fish? Fumbling and bumbling around trying to grab it by the tail? Or scooping it up with a net, and gently releasing it in short order? When I guide, I use a net, with rubber mesh. People want to land the fish they hook. They don't want to watch me punt a 20-incher by grabbing the leader. I know that.



    I carry a net but more often than not I don't use it. I only net fish that I want to photograph, I guess. I've gotten pretty diligent about smashing my barbs over the years and that makes releasing fish a breeze - a net is rarely necessary. one caveat - I definitely carry a net when fishing the great lakes tribs for steelhead. those fish are unmanageable without a net. yrs- Evan!

    Way back in 1972, when calling yourself a "liberal" or a "conservative" didn't quite have the knee-jerk connotations it does now, Congress passed and Richard Nixon signed into law (reluctantly, after a failed veto) the Clean Water Act. Because that's what you do when your rivers are so polluted they catch on fire.

    And it's not hyperbole to say that in the three decades since its passage the Clean Water Act (in tandem with the Clean Air Act) has been largely responsible for the angling opportunities we now enjoy. Along the way many recreational angling groups like B.A.S.S. and Trout Unlimited have supported and fought for the act's goals. But thanks to recent Supreme Court decisions that severely limit the act's regulatory scope, pollution rates are rising once again.

    Thousands of the nation’s largest water polluters are outside the Clean Water Act’s reach because the Supreme Court has left uncertain which waterways are protected by that law, according to interviews with regulators.

    Thanks for this post. The Clean Water Act debacle is near and dear to many of us here in WV, where the CWA is basically totally unenforced. Every day I wake up and think "maybe today is the day the CWRA gets introduced and passed." short sightedness at it's worst. yrs- Evan!

  • Bourjaily: Remington's Competition 1100 Prototype

    Clearly, the gun in this picture is not your father’s 1100.

    It’s a prototype Competition 1100 sent to me by Remington’s shotgun product manager Brian Lasley. The gun grew out of a conversation I had with Lasley about affordable youth target guns. I cannot take credit for the result because Brian sensibly ignored 99% of what I told him to do and took the project in a totally different direction.

    awesome! the fake carbon fiber look is a little silly, but it still sounds like plenty of fun to shoot.
