That sounds really good.
Backstrap is such a fine cut on its own that I usually just put some salt and pepper on it, grill it quick, and eat it rare and bloody. Yum yum.
But I have two fat black bear backstraps in my freezer that I can't serve rare because of trichonosis concerns. I've eaten a lot of the other cuts, and they're great as long as they braised....long and slow and wet cooking.
But I've been unsure of what to do with the backstraps. Your recipe sounds perfect. I'll let you know how it turns out.
I've hunted moose and deer with the Marlin 1895 in .45/70. To me, that is the perfect rifle for Maine. Quick handling, easy to carry and shoot, with plenty of knock-down power. I think that's the perfect pick.
I've got to give Tred props for hunting with traditional archery tackle and keeping his show real. That is something a lot of shows don't do. But I have to agree his personality is extremely annoying. He forces me to change the channel.
Don't listen to wags. Sounds like he got dropped on his head as a baby. I think the site functions a lot better and is actually easier to use than before. Yes, now I have to register, but I think that's actually kind of cool. I did notice some weird quirks when loading some pages (a bar across the middle of the page) that seemed to be a bug.

I'm a bowhunter (longbows or recurves only), and I'm looking for a caribou outfitter who specializes in archery hunts. I do not want to spend a week just sitting in a blind. I'd like a place that has lots of opportunities to stalk. Any ideas?
