Do you remember the first time you had a slice of deer backstrap—piping hot off the fire, charred on the outside, pink on the inside and dripping with juices? I do, and my reaction was pretty much the same as little Ethan Beach’s reaction to his first taste of bacon. The pork launches him—at the prompting of his family—into a call-and-response sermon on the beauty of cured meat. It’s pretty funny, and also a reminder of the pleasure we should all take in eating good food, whether we’re biting into bacon, backstrap or slice of deer salami.
