Although the weather station may not show it, open water for everyone will be here soon enough. With the gaining popularity of rough fish, such as carp, I thought I’d share this video showing a couple chaps from the land down under smoking some carp in the bush. They use a very simple technique and an easy-to-follow recipe that’s worth trying on carp, or even trout or salmon.

I really like how they use of dry woods chips topped with wine-soak chips to keep the smoke rolling, but what I’m most intrigued about in this video is the portable smoker box they are using. I reckon it’s an Aussie product, but I have found some similar products advertised as stovetop models. Here’s one from New Zealand, but I’d be interested to find something like it here in the states.
