I've noticed a yellow tint to some of the flesh of a channel catfish before. Mostly around the belly, probably due to the high fat content in that area.

Allot of it is caused by the PH of the water especially brackish waters along the sea coasts.

Typically Bullheads will have yellow flesh. Channel and Blue cats will have yellow flesh on thier "shoulders" behind the head.

In Florida there is a catfish that we called a buttercat 'cause his belly is so yellow. They are simular to a bullhead but very yellow.
