I love fishing for Shoal Bass. They are somewhat of a warm water smallmouth. Good fun on fly tackle and spinning gear alike. Really agressive and not bad for a shore lunch.
There are also many other species that could make a claim here.
Brook trout, nothing beats the pride out of catching a wild brookie out of a stream on a micky finn that you yourself tied, there are no words to describe it... just being out in the woods is part of it, the trout just adds even more joy to it. And they aren't that bad eating and very pretty to look at. And I don't care what you brown trout fishermen say about the brookie being the easiest trout to catch, you try catching a 12 inch fish on a fly rod out of a stream smaller in width than your fly rod is long... that is as much of a challenge as almost any fish.
freshwater: largemouths, because they fight well, and are fun to catch
saltwater: i would have to pick tarpon, i've only been once and that was with a a guy my dad used to work with, i only got one hookup, and didn't even land it but it gave a hell of a fight, and i wouldn't hesitate to go again.
-I am torn on that one I remember the first Small Mouth Bass I caught on my fly rod what a hoot...but I seem to chase trout 9/10th of the time so a toss up between SMB and trout for eating I prefer Walleye, salmon, trout and catfish in that order

smelt, man they are hard to hook...ahhhahhahaahhhhaaahhhahaahhahahah no really just kidding they are really hard to catch with out a net. hehehehehehe
if it swims in the great lakes it does not matter, it is GREAT! even gobbies they make great bait, like smelt ,but I eat the smelt.

Cutthroat Trout, pretty fish and usually in beautiful country and they taste great.
My favorite is trout. (rainbow,browns, or brookies are the three I can fish for in my area.)

Small mouth. They fight like mike tyson used to!
I like silvers on a fly rod. Cohos just hitting freshwater, with sea lice on them are a blast. They are good for you too, lots of Omega threes.

Freshwater: Smallmouth. They are unbelievably aggressive and anything over 15 inches puts up a great fight and fight the hardest pound for pound.
Saltwater: Either tarpon or a big yellowfin tuna.
Spring time crappie! What a blast!
