I am hooked on striped bass. I live near one of the best striper fisheries in the U.S. and we have a ball fishing for them. I like largemouth bass fishing too but it is nice to hook into a freshwater fish that can pull you out of the boat.
I am still deciding between Steelhead and Catfish. both fight hard, but the steelhead provide me with more active, lure fishing and almost always strike hard. But catfish are sometimes harder to trick, and I like that challenge. The cats can sometimes strike hard, but it's usually more subtle hits, providing a more consentrated, intense fishing. It also dependsw on the season. Steelhead are only around in the spring and fall, but cats are always available.

Bluegills on a fly rod when they are on the bed.
Trout! Doesn't matter the species, although a fiesty rainbow at the end of my flyrod is a heck of an enjoyable moment.
