Alaskan Lake Trout is the tastiest Salmonid IMO. Chinook or King Salmon will give you one heck of a fight but I will go with Silver Salmon on lite tackle 'cause they jump more.
In fresh water love to catch a big Fla Largemouth and eat Walleye, Crappie (Speckled Perch in Central Fla) and Channel cats all fileted and in that order.
One other thing Arctic Grayling are very tasty too kind of like eating a Crappie (not like a trout at all).
As far as eating is concerned bream and catfish can not be beat. Both are also fun to catch, although I will spring ultra-light fishing for bream over almost anything.
Try catching a carp on super ultra-lite 2pound line. It will jump more than a trout, fight harder than a bass, and hunker down harder than any catfish ever thought of.
Catfish. I luv fishing for cats, i can be lazy smoke a cig and jus sit down and relax and fish at the same time. I like them cuz i usually fish for em' at nite. They also taste awesome, fryin it cajun style is the way to go.
i know your gonna think im crazy but bluegill, if they were the size of bass everyone would fish for them...they are the hardest fighting fish for ther size
I am still deciding between Steelhead and Catfish. both fight hard, but the steelhead provide me with more active, lure fishing and almost always strike hard. But catfish are sometimes harder to trick, and I like that challenge. The cats can sometimes strike hard, but it's usually more subtle hits, providing a more consentrated, intense fishing. It also dependsw on the season. Steelhead are only around in the spring and fall, but cats are always available.

Mine is a toss up between Walleye and Chinook Salmon and often depends on what I'm eating at the moment.
I kinda' lean towards walleye when it comes to eating but Kings (Chinook) are definately the Champ when it comes to angling.
My favorite is trout in a river or stream. Second to that is probably active bass, they are great fighters and topwater fishing is alot of fun.
Number 1 is bass, great fighters and 2nd would be catfish also good fighters.
#1 trout #2 bass.
#1 walleye #2 pike
To catch or eat? To catch for freshwater it is Smallmouth bass. To catch and eat for saltwater its a toss up between stripers and tuna.
For a southern boy it has to catfish!
Rainbow trout and cutthroat trout.

That is a tough one, but I'm going to have to go with bass because you can catch them in more than one way.
