Q:
When fishing for gar, what type of hook should I use, because I can never get them all the way to shore. They seem to come unhooked right when they start coming out of the water. They are never very deeply hooked.

Its a piece of nylon rope that is unweaved and threaded on you're line, there teeth catch in it and you reel them in.

i think most big hooks will work fine, just set the hook a few times throughout the fight to ensure it stays set well

I use a #3 hook but I have the same problem. I think it's because of the long snouts. I am going to try what Alex said above and use nylon rope. I also play them for awhile when they start biting because it seems like if you wait till they really take it and run you have a better chance of hooking them. Fun to catch but I just throw them up on the bank here, they are pretty much a nuisance fish.
