Is there a good goose reipe? I've tried everything from baked and roasted

I always liked taking the fillets and letting them sit in salted water for 2-3 days then cutting the fillets into the size of small chicken breast and soaking them in italian dressing for an hour in the fridge then wrapping one or two pieces of bacon around them and grilling them

My favorite for duck and goose is real easy to make! I use only breast meat for this one. Save the legs for another time. Cut the breasts into chunks sear with olive oil and fresh cut garlic cloves. Turn down the heat. Mix in a can of cambells condensed wild mushroom soup mixed with 1/2 cup milk, simmer on lowuntil it thickens and the duck is done. In the meantime make up a pot of wild rice( You can do white or brown too!) Put the rice on the plate and put a nice scoop of the sauce and duck on top of the rice. As always salt and pepper to taste. Dont forget the garlic salt too! Enjoy!

Here's a recipe that is really good for duck...can't imagine it would be any worse with goose:

Make a marinade of apricot, whiskey, and worchestshire (or however you spell it) sauce, and brown sugar.

Cut meat into bite size chunks, add a slice of portabella mushroom, and wrap with a piece of bacon using toothpicks to hold everything together. Put them all in the marinade and let them sit for the better part of a day.

Grill them using medium heat and brush them with the marinade while they are cooking.

I shoot lot of geese and usually make it all into jerky. I don't have any recipe handy right now, but I know there is one on the ducks unlimited website, www.duck.org They have a bunch of different types of recipes there if you want to check it out.

Look up Jerky recipes. The jerky i've done is really great. It tastes amazing. I use s smoker to cook mine, but a dehydrator or an oven can also be used. Lots of marinating!

.Gut it, hang it for a week in freezing weather. remove all skin and fat. Smoke it with fruit or nut wood. Drink a couple of 10% beers, slice it into chips and eat with Ranch and Wheat Thinss or whatever is you favorite cracker while watching the Superbowl or the national championship college game. You will have completed the Winter Ritual, and can start picking out your new shotgun or truck or whatever. Maybe put together a survival gear pack.

I second the smoker. I like to soak mine in salt water for at least 24 hours. Put them in a big pot in the frig. Always seems better if you don't freeze them. Good hard wood and a cajun rub and you are in business.
Made one that way for a Christmas party.. Everyone was asking me what kind of meat it was later.
