8 Trout Fillets
8 Strips of Bacon
1 Garlic Clove
1 Red Onion
Corn Meal
2 Cups of Beer
Salt and Pepper to taste
Heat a skillet, preferably cast iron to medium heat
Place the bacon in the skillet and cook till it starts to get crisp and remove from the skillet. Roughly chop the bacon to desired size.
Place 2 cup of diced red onions into the bacon grease and and let it saute for 3 mins and then add the chopped garlic to the pan. Continue sauteing onions and garlic till the onion begins to soften and the garlic is toasted.
Remove the onions and garlic from the skillet with a slotted spoon and set aside. Turn the heat up to medium high and place the trout that has been dredged in cornmeal into the skillet with the bacon grease. Cook on both sides until nicely browned and white on the inside, about 8-12 minutes total.
Remove the fish after it has been cooked to your liking and turn the heat back down to medium and pour in the 2 cups of beer. Scrape up all the bits of flavor in the pan and let the beer thicken for about 3-5 minutes or until bubbling. Return the bacon, onion and garlic into the pan and saute in the beer for about 3 minutes.
Spoon the bacon, onion, garlic and beer sauce over your fried trout and enjoy.
Sounds like a winner to me as long as you have a good cold beer to go along with it.
