Big Game Hunting
All,
I have about 100 lbs. of ground elk in the freezer from last fall and while I really like burgers I would like to try something a little more interesting. One thought is to turn some of it into sausage. I would prefer not to go out and buy a ton of sausage making stuff, spice packs, etc, and was hoping to get some spice receipes (breakfast, Italian, etc.) that I can make up at home along with some guidance on how much and what type of fat I should include when making up sausage patties.
Can you guys help?

While my hunting buddy protects his sausage recipe better than his PIN number, I know we cut it with 20% pork fat. We would ask the butcher to hold it back for us, becuse they usually throw most of it out. Most nicer supermarkets cut their own meat at the meat counter and would be happy to do this for you if you ask. It may take a few days, depending on their shipment schedule, but it is cheap. If you don't have a grinder, you could proably even talk them into grinding it for you so all you have to do is hand mix it.
I would suspect that a sausage recipe request at the below forum would get some good results.

This one's from my blog, Cooked Animals. You can certainly use elk meat instead of venison!
The Best (Venison) Breakfast Sausage
-3 pounds ground venison
-1 pound ground fatty bacon
-1/8 cup curing mix (Morton Tender Quick)
-1/2 Tbl fresh ground pepper
-1/2 Tbl crushed red pepper flakes
-1/8 cup brown sugar, packed
-1 1/2 Tbl dried sage
Directions for Cooking:
In a large bowl, mix ground venison and ground fatty bacon with curing mix, pepper, red pepper flakes, sugar and sage. Mix it well so everything is evenly incorporated.
Make small, flat patties and cook over medium heat, preferably in a cast iron skillet.
This recipe makes 32 servings. If freezing, divide into one-pound allotments and wrap uncooked meat in plastic wrap and freezer paper.

www.himtnjerky.com will get you in touch with Hi Mountain a local company that makes jerky and sausage seasonings and cures. I haven't found any better. I use them and get rave reviews.
