I don't filet bluegils. Just scale & cut the heads off. Wash and scrape them with a dull knife to get them nice and clean. Salt and pepper dredge in meal and deep fry in canola oil til golden brown and eat around the bones, delicious.
Just catch a mess of bluegills, scale 'em and cut'em, like Del said, then just salt and pepper 'em,and place them underneath the broiler, until golden brown.
If you catch a lot of bluegills, a lot of people will get electric knives to fillet them, which makes very quick work of it. They have abttery powered ones now as well. I like my bluegill to be at least 6 inches to make it worth my while.

depends on your definition of a good filet
Big enough for me to eat.
i like them at least the size of my hand. but you can just scale the smalls one is you want and eat them like that
my rule of thumb is bigger than my hand in length and width or about 8 inches or bigger usually work.
i hate bluegills one bit me one time
