The whitetail deer is considered by most authorities to be the most challenging game animal to hunt on this planet. Hence, it gets my vote for favorite animal to hunt under fair chase conditions. That rules out hunting over timed feeders.
I can't vote against the whitetail. Challenging, readily accessible to most without big $$ travel, and never two hunts that are the same. No matter what a person's style of hunting, it seems like the whitetail can cover it. Can't beat the table fare either!
I have hunted bear, turkey, whitetail, mule deer, elk, antelope, and every critter in between....and i just can't get past the majestic gray ghost....the mule deer...Its something with their antlers, the country where they live, and the thrill of the stalk.
If I had he good fortune to be able to hunt them, I am sure my favorite would be elk. They are a majestic animal and they live in beautiful country. Other than that, I think I like hunting coyotes next best. They are smart and hard to get. Deer seem to be pretty simple to hunt by comparison.
Since I got to go alligator hunting last year, I would have to say alligator. The bad thing is I don't know when I will get the chance again, so I'll go with Whitetails.
Not to muddy the water here, but that question is not really answerable for me, much like choosing between a big steak and a seafood buffet. I revel in spring mornings when the woods ring with gobbles, and fall mornings when the dogs strike. I look forward to that first fall morning looking for a mess of bushytails just as much as the first morning of archery or firearms deer season. I guess I'd have to say "all of them".

There's nothing like trying to get a spring gobbler in range when you can feel the ground rumbling from him gobbling.And the sound of Beagles hitting a hot Rabbit has never made me not smile and say "That's my dogs". And deer season is a whole nother feeling all to itself.
Currently I would say Whitetail deer with my Bow. But I have yet to go on an elk hunt, but getting within bow range of a bugling elk, I am confident it would move to the top of my list. Not to mention the beautiful country elk are found in would add to the hunt and make it all the better.

There are two that I personally enjoy hunting, the Whitetail deer and the Eastern coyote. The coyote especially presents a significant challenge.
