I tried something new with rabbit today and it came out really good.
Soak deboned rabbit meat in a salt water brine for 3 days. In a 10" skillet coated with bacon grease, cook rabbit adding a generous amount of Weber Grill Creations Sweet 'N Tangy BBQ seasoning. When the meat is just about cooked, put it in a crock pot being sure to add all of the BBQ juices from the skillet into the crock pot. Add some more BBQ seasoning and about a cup of water and allow the meat to cook on low in the crock pot for 4-6 hours. The result will be very tender and delicious rabbit meat.
Serve over rice.
