can i take a freshly cleaned squirrel and put in in the oven with cut up potatos and carrots??? what about boiling it i am new to cooking and hunting squirrel any suggestions??
I PREFER TO BOIL MINE WITH A POTATO AND ONION FIRST IT TAKES SOME OF THE WILD TASTE OUT OF IT. YOU CAN USE MORE THAN 1 OF EACH IF YOU COOK SEVERAL SQUIRRELS AT THE SAME TIME (WILL USUALLY USE 2 OF EACH FOR 5-6 SQUIRRELS). THEN YOU CAN BREAD IT AND FRY IT, PUT IN SOUP OR POT PIE, OR HOWEVER ELSE YOU WANT TO PREPARE. OH BY THE WAY DO NOT EAT THE POTATOES OR ONIONS YOU BOIL WITH SQUIRREL.
I MAKE A STEW WITH SQUIRREL, VENISON, AND BEEF, AND ALL KINDS OF VEGETABLES (WHAT EVER KINDS YOU LIKE), POTATOES, ONIONS. PUT ALL YOUR INGREDIENTS IN A STOCK POT, COVER WITH WATER, AND ADD BEEF BOUILLON, AND SPICES TO YOUR TASTE, AND SLOW COOK TILL MEAT IS WELL DONE.
There are two kinds of squirrels old and young this will determine how you can cook it.My favorite for a mixed bag of them old and young is to soak in salt water until meat whitens up,Salt and pepper roll in flour take a cast iron pot with oiland put a crust on them over med heatremove and throw in flour to make a roux after browning water it down and put the meat back inand let it rock until the gravy will stick to the wall.Bake a pan of biscuits and you have a meal fit for anybody.
sear meat, move to crock pot cover with cream mush soup...cook until meat fall from bone...remove all pieces, take bones out,put meat back in.. add sourcream to thicken, (should have laready salt/pepper to taste) serve over noodles or homemade baked bread
onions and celery are good to add flavor while cooking
I would also soak in a slat solution overnight before cooking
My grandmother used to cook them every time I brought a hand full home. She would used the normal chicken and dumplings recipe but substitute the chicken with squirrel.I remember we grand kids would fight over who got the last bowl.
Parboil it until the meat will fall away from the bones and dice up the meat. melt 2 tbsp. butter in a skillet and lightly brown 2tbsp, flour. wisk in milk and simmer to make a gravy. Mix in the squirrel meat and season with salt and lots of black pepper. Serve it over your favorite biscuits. Breakfast of champions.
