Greetings from Tierra del Fuego in Argentina, where Tim Romano and I are enjoying a brilliant week of fly fishing for goliath sea-run brown trout from the legendary Kau Tapen Lodge. It's a surreal experience to be standing in the iron-gray currents of the Rio Grande, with the wind buffeting across the stark, austral landscape, casting two-handed rods as you're being watched by guanacos and condors. Back in the late 1980s, I was wearing flannel before anyone even heard of Pearl Jam, so it shouldn’t come as a surprise that I’m at the forefront of food fashion as well, at least according to the Food Channel list of what food trends will be hot in 2013. In fact, I’m betting most Wild Chef readers are ahead of the trend that says smoking will be the next big thing in the restaurant scene. Firing up the smoker is just one of the many techniques we regularly rely on.
Over at Epicurious, it’s more of the same with their claim that the white-hot focus on all things below of the Mason-Dixon line will push even further south to Brazil, where churrascaria reigns. I will admit I was getting tired of food media hitting me with yet another recipe for the world’s best fried chicken and waffles, so reading about meat-centric Brazilian barbecue is definitely something to look forward to. Yeah, it's a bit cliché but I want to know what you all are planning on doing differently fishing wise for 2013. A friend and I had a conversation the other day about what we'd like to learn, try, visit and do more of next year. We came up with a number of items.
Mine include really learning how to spey cast with some proficiency and starting to figure out our local reservoirs for big lakers and musky on the fly. Try as I might, I have not yet managed to master spey casting. And it drives me crazy because I know, at least in certain situations, the benefits are tremendous and you can catch a lot more fish. Tim Romano and I made our first trip together as a photographer-writer team for Wild on the Fly magazine in 2003. We went to southern Chile to fish for trout in the region around Coyhaique, and came away with a great story. But more importantly, we forged a strong friendship that has lasted for a decade now. Interestingly, we don't travel and fish together as often as you might think. He's usually heading north as I'm heading south, but we do have a killer F&S piece brewing, based on a trip we took to Guyana last spring.
