Guaranteed to get you out of the kitchen in less than half an hour and please your guests as well, this is my all-time favorite steak recipe.
1 pound whitetail steaks, 1/2 inch thick
5 tablespoons butter
2 cloves garlic, minced
4 ounces mushrooms, sliced
1/4 cup Marsala wine
3 green onions, chopped
In a 9-inch skillet, melt 2 tablespoons of the butter over medium-high heat. Add the steaks when the butter starts to sizzle, and cook 3 minutes a side for rare, 4 minutes a side for medium. Remove the steaks from the pan, and place on a heated platter. Cover.
Add the rest of the butter to the pan, lower the heat to medium, and saute the garlic and mushrooms about 3 minutes, or until tender. Add the wine and green onions to the pan and bring the wine to a slow simmer. Return the steaks to the pan, smother in the sauce, and simmer another 2 to 3 minutes.
